The calisson, confectionery made in the purest French tradition in Provence, is made from candied fruit and almonds covered with royal icing, all placed on a background of unleavened bread.

This delicate delicacy with its particular shape, close to an almond, is an authentic Provencal specialty since the 15th century. We offer it here in its classic version and in a tasty strawberry variation.
